Grape variety
A true ambassador for Alsace wines, it is made from a blend of Auxerrois (90%), pinot gris (2.3%) and Chardonnay (6.9%).
We aim for optimum ripeness with healthy grapes, sorted in the vineyard.
Malolactic fermentation completes the gourmet balance.

Vineyard
Tillage: ploughing, composting, mowing.
Treatments: Bordeaux mixture, sulfur, plant infusions and seaweed extracts.

Terroir
Clay, marl and sometimes limestone and sandy hills in the Ribeauvillé region.

Winemaking
Harvested by hand. Sorting in the vineyard. Whole grapes pressed. No sulfur under the press. Natural sourdough.
Aged on fine lees for 6 months.
Sterile filtration, chilling and bottling according to the principles of prise de mousse (addition of organic sugar and organic sourdough).

Tasting and gastronomy
A beautiful effervescence on a brilliant robe. Elegant aromatic finesse, with lemony notes.
