Vineyard
Old vines: 30 to 40 years Planting density: 4500 vines/ha.
Tillage: ploughing, composting, mowing. Treatments: Bordeaux mixture, sulfur, plant infusions and seaweed extracts.

Terroir
Rimelsberg: terroir
clay-marl with a slightly chalky reaction from the
Lias, facing east to south-east. Includes up to 50% clay, which brings acidity and freshness. Late-ripening terroir, conducive to over-ripening. Potential Premier Cru.

Winemaking
Harvested by hand. Sorting in the vineyard. Direct pressing of whole grapes. No sulfur under the press. Natural sourdough. Aged on fine lees for 6-9 months.

Tasting and gastronomy
Bright yellow in color, the nose is very expressive, with notes of spices and candied fruit (raisins and mague). Concentrated, rich and round on the palate, with a touch of acidity for a fresh finish.
Perfect as an aperitif or for receptions. Goes well with foie gras, strong cheeses, spicy dishes and desserts that aren’t too sweet.
