Vineyard
A blend of several plots of vines around forty years old.
Planting density: 5000 plants/ha.
Tillage: ploughing, composting, mowing. Treatments: Bordeaux mixture, sulfur, plant infusions and seaweed extracts.

Terroir
Grand Cru Sonnenglanz: a sunny, late-ripening terroir of clay-marl with a limestone reaction.

Winemaking
Harvested by hand. Sorting in the vineyard. Direct pressing of whole grapes. No sulfur under the press. Natural sourdough.
Wine vinified in the Burgundy style: oak barrels after settling. It only left the barrels after 9 months of ageing. Malolactic fermentation.

Tasting and gastronomy
Thick, golden color. The nose opens with toasty, woody notes. The palate is rich and powerful, yet structured by freshness.
