Rimelsberg: clay-marl terroir sprinkled with rolled pebbles in the extension of Grand Cru Schoenenbourg.
Great terroir conducive to late harvesting and aromatic grape varieties.
Winemaking
Harvested by hand. Overripe botrytized grapes (noble rot). Gently harvested at the end of the harvest. Direct pressing of whole grapes. No sulfur under the press. Natural sourdough. Aged on fine lees for 6-9 months. Filtered wine.
Tasting and gastronomy
Fine nose with notes of candied fruit and quince jelly. Supple, fat and rich on the palate, with a pleasant hint of acidity on the finish.
